Description
The wine Zelìa is made from Syrah grapes vinified “in white”. The grapes are harvested by hand early in the morning to guarantee that they maintain low temperature until being processed. Once taken to the cellar, the grapes are selected on a double convey belt, separated from the stems and then transferred to the stainless steel tanks where they undergo a cold maceration for about 5/6 hours. After the macerating the liquid is drawn off and sent directly from the tank to ferment at alow temperature in another stainless steel tank. This kind of work, together with a slightly early harvest allows us to maintain the scents and aromas of the grapes which are then found in the final product. After fermentation, the wine undergoes 3-4 months of aging in stainless steel tanks and about 1 month of aging in bottle before release.
