Extra virgin olive oil is the highest grade of virgin oil derived by cold mechanical extraction without use of solvents or refining methods. It contains no more than 0.8% free acidity, and is judged to have a superior taste, having some fruitiness and no defined sensory defects. The word “virgin” indicates that the olives have been pressed to extract the oil; no heat or chemicals have been used during the extraction process, and the oil is pure and unrefined. Virgin olive oils contain the highest levels of polyphenols, antioxidants that have been linked with better health.
In our estate, Azienda Agricola Podere Casanova, located on the beautiful Chianti hills ( south of Florence ), 11 hectares of field with over 500 olive trees, are producing every year around 350 liters of pure extra virgin olive oil.
